Moroccan tea is an institution. Breakfast? Time for tea. Middle of the morning? Let's have a tea. After a meal? Bring on the tea. Evening? Time to go to a cafe for some tea. It's usually served like this.
Stuff the tea leaves into a pot filled with hot water, then add those gigantic bricks of sugar. Let it sit a quick moment, then pour a glassful into a glass. Be sure to lift the pot far away from the cup as you pour, so there's a long stream of steamy water shooting into the glass. And don't spill a drop!
After you fill the glass with tea, open the pot and dump it back in. Repeat. Then, pour half a glass or more for each person, and enjoy. It's sensational.
